History of Kalua Pork | What is kalua pig?
Kalua pork is a traditional Hawaiian dish that is made by slow-cooking a whole pig in an underground oven called an imu. Kalua pork has a unique flavor that is due to the way it is cooked. The word “kalua” means “to cook in an underground oven” in Hawaiian. Because the slow cooking process allows the flavors of the pork to meld with the smoke from the imu, the resulting dish is often described as being incredibly flavorful. The result is a tender, smoky pork that is simply delicious.
The history of kalua pork dates back to the time of the early Polynesian settlers in Hawaii, specifically around 400 AD. When the Polynesians brought the first pigs to the islands, they soon began to cook them in a traditional underground oven called an imu. They soon began to cook the pigs in the imu, a simple oven that was made by digging a hole in the ground and lining it with rocks. They built a fire on top of the rocks, then placed the pig inside the imu. Afterwards, they covered it with leaves and dirt. The pig was cooked slowly over a period of several hours allowing the meat to become tender and flavorful. The banana leaves added a smoky flavor to the meat. In addition, the hot coals cooked the meat evenly, which gives you a better recipe for kalua pork in the Instant Pot.

Mine seemed to have too much liquid and seasoning tasted diluted. Maybe because my pork shoulder was bone in and therefore had less meat? I usually slow cook this in the crockpot (and with only salt and liquid smoke) but I wanted a quicker pressure cooker recipe. The meat was very tender, but the flavor was not strong enough.
