Ingredients for the Beef Stew Power Pressure Cooker XL

  • 2 pounds quality stew beef: chuck roast or london broil or a large beef shank 
  • 1 cup chopped red onion
  • 2 cups golden beets
  • 4 cups of carrots
  • 2-4 cups sweet or golden potatoes
  • fresh thyme, salt, pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 4 garlic cloves
  • 4 cups of beef stock

  1. Fully cook and brown the onions and garlic in olive oil, salt and pepper using the Saute setting, add in some thyme part way through.
  2. Pour the stock into your Instant Pot to deglaze. Leave the pot heating on the Saute setting while you prep the rest of the vegetables. This will start to heat the liquid and reduce the time needed for the pot to heat and pressurize before it actually starts the cooking process.
  3. When the vegetables are all chopped (and meat), carefully place the meat into the IP, add the vegetables on top along with more thyme if desired.
  4. Put the lid on, select the Meat/Stew setting and cook for 30 to 33 minutes-this is a large time gap with an IP, so select your time based on how large the pieces of meat are cut. We enjoy the vegetables really soft in our stews, if you are similar this will be perfect for you!
  5. Allow the pot to NPR (natural pressure release) when the timer has gone off to help lock the moisture into the meat.
  6. Remove the remaining full pieces of thyme. Allow the cool for a few minutes before serving.
