On weeknights, I'm always on the search for recipes for delicious and healthy meals for my family that also don't take too much time to prepare. Last night, I created this yummy chicken and vegetable pasta that combines all those things. For a rich sauce that tastes like it takes hours, here's my secret: Alfredo Sauce! I once heard a story about Alfredo. Supposedly there was a chef named Alfredo, and his pregnant wife asked him to make her something that she could stomach. A sauce of cream, butter, parmesan, salt, and pepper did the trick. He liked it so much that he put it on the menu of his restaurant, and the rest is history. I have no idea if that is true or not, but it's a cute story. I digress; It is time to check out the Chicken Alfredo with Vegetables Recipe and let us know what you think!

  1. Season the chicken with salt, pepper, and thyme. Heat the olive oil in a large saute pan until hot.  Add the chicken and saute' for a couple of minutes, then add the mushrooms and peppers. Saute until the vegetables have softened and chicken is mostly cooked (that's a technical term…like 3/4 cooked).
  2. Deglaze the pan with the chicken stock. Add the butter and stir till melted, then add the cream. Bring to a boil for about a minute, and then add the pasta and Parmesan cheese. Start with 2 1/2 cups of cheese and stir until melted. If the sauce is too thin, add a little more Parmesan and melt. Season with salt and pepper to taste.
  3. Plate and garnish with the diced tomatoes and chopped parsley.

If you are looking for the best chicken Alfredo recipe, then look no further. You can literally see the seasonings, the herbs and the bright color of sauce so you know that it has to be good! We hope that you are inspired by this Chicken Alfredo with Vegetables Recipe. Happy cooking!
