I love a good salad dressing. One of my favorite salad dressing recipes growing up is all about Viva Italian. We had the cruet and the Viva Italian package plus we would add our own vegetable oil and balsamic vinegar. but she switched the amounts meaning we halved the oil and doubled the vinegar. It was tart, refreshing and really delicious. I still make that dressing to this day and so does my sister. My husband and I also add extra virgin olive oil because we love the taste. Pomegranate Balsamic Vinaigrette Dressing

Ingredients

• 1 cup pomegranate juice
• 2 tsp honey
• 1/2 tsp salt
• pinch of pepper
• 1 tbsp balsamic vinegar
• 1/3 cup extra virgin olive oil
• 1/2 tsp dijon mustard

Directions

1. Bring pomegranate juice to a boil over medium.
2. Boil 15 minutes until reduced to about 1/3 cup.
3. Allow to cool for 10 minutes.
4. Whisk in remaining ingredients and set aside to cool.
