Chicken Alfredo with Vegetables Recipe
On weeknights, I'm always on the search for recipes for delicious and healthy meals for my family that also don't take too much time to prepare. Last night, I created this yummy chicken and vegetable pasta that combines all those things. For a rich sauce that tastes like it takes hours, here's my secret: Alfredo Sauce! I once heard a story about Alfredo.
Supposedly there was a chef named Alfredo, and his pregnant wife asked him to make her something that she could stomach. A sauce of cream, butter, parmesan, salt, and pepper did the trick. He liked it so much that he put it on the menu of his restaurant, and the rest is history. I have no idea if that is true or not, but it's a cute story. Chicken Alfredo with Vegetables Recipe
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 pound chicken, cut into thin strips
- 1 red or orange bell pepper, cut in strips
- 1/2 cup sliced mushrooms
- 1 oz chicken stock
- 1/2 cup butter
- 2 cups cream
- 2 1/2 – 3 cups Parmesan cheese
- 1 pound pasta, cooked to package directions
- 1/3 cup diced tomatoes
- Chopped Italian parsley for garnish
- salt to taste
- pepper to taste
- thyme to taste
Directions
- Season the chicken with salt, pepper, and thyme. Heat the olive oil in a large saute pan until hot. Add the chicken and saute' for a couple of minutes, then add the mushrooms and peppers. Saute until the vegetables have softened and chicken is mostly cooked (that's a technical term…like 3/4 cooked).
- Deglaze the pan with the chicken stock. Add the butter and stir till melted, then add the cream. Bring to a boil for about a minute, and then add the pasta and Parmesan cheese. Start with 2 1/2 cups of cheese and stir until melted. If the sauce is too thin, add a little more Parmesan and melt. Season with salt and pepper to taste.
- Plate and garnish with the diced tomatoes and chopped parsley.

The Prego Alfredo is my favorite. It is low in carbs, which is something I need to be mindful of. It tastes great with zoodles or spaghetti squash. Its thick and creamy, the way alfredo should be.
