Nothing says summer to me like freshly squeezed lemonade. However, my kids really prefer the pink lemonade that I make from concentrate because it really tastes soooo delicious. Pink Lemonade Cupcakes

Yields 2 dozen regular sized cupcakes

  1. Preheat oven at 350 degrees. Insert 24 cupcake liners in pans. Set aside.
  2. In a large mixing bowl, combine the white cake mix and pink lemonade powder. Add the water, vegetable oil and eggs and mix on low speed until moistened.
  3. Stir the lemon zest into the cupcake batter. Beat at medium speed for 2 minutes.
  4. Fill each cupcake liner 2/3 full.
  5. Bake at 350 degrees for 18-21 minutes or until an inserted toothpick comes out clean.
  6. Allow cupcakes to cool for 20-30 minutes. Place cupcakes on wire racks to complete the cooling process.
  7. To make the pink lemonade cupcake frosting, in a large mixing bowl, add the powdered sugar and butter until light and fluffy.
  8. Add the lemonade concentrate, vanilla, 1 tsp of zest and food coloring. Blend until well incorporated.
  9. Frost cupcakes with your favorite frosting tip or spatula. Insert a colorful and decorative straw.
