Pink Lemonade Cupcakes

Nothing says summer to me like freshly squeezed lemonade. However, my kids really prefer the pink lemonade that I make from concentrate because it really tastes soooo delicious. Check out this recipe for these fabulous pink lemonade cupcakes.


Yields 2 dozen regular sized cupcakes

  • 1 (16.5 oz) box white cake mix (I used Duncan Hines Classic White)
  • 1 cup water
  • 1/4 vegetable oil
  • 3 large egg whites
  • 3 T pink lemonade powder (I used Wyler's)
  • 1 teaspoon finely grated lemon zest
  • Decorative straws


  • 1 (16 oz) bag/box powdered sugar
  • 1 stick unsalted butter, softened
  • 3 T frozen pink lemonade concentrate (we used Minute Maid)
  • 1 teaspoon vanilla extract
  • 1 teaspoon finely grated lemon zest
  • 1-2 drops pink food coloring

1. Preheat oven at 350 degrees. Insert 24 cupcake liners in pans. Set aside.

2. In a large mixing bowl, combine the white cake mix and pink lemonade powder.

3. Add the water, vegetable oil and eggs and mix on low speed until moistened.

4. Stir the lemon zest into the cupcake batter.

5. Beat at medium speed for 2 minutes.

6. Fill each cupcake liner 2/3 full.

7. Bake at 350 degrees for 18-21 minutes or until an inserted toothpick comes out clean.

8. Allow cupcakes to cool in pans for 10 minutes.

9. Place cupcakes on wire racks to complete the cooling process.


1. In a large mixing bowl, add the powdered sugar and butter until light and fluffy.

2. Add the remaining ingredients and blend until well incorporated.

3. Frost cupcakes with your favorite frosting tip or spatula.

4. Insert a colorful and decorative straw.

5. Enjoy!
