Next, blend half of the remaining yogurt and the blueberries in the blender until smooth and set aside.
In a separate small bowl, mix together the remaining yogurt, a tablespoon of coconut cream and the unsweetened coconut shavings.
In a larger bowl, whip the heavy cream until it is smooth and slightly thicker.
Mix in the honey and add 1/3 of the cream to the strawberry yogurt, 1/3 to the blueberry yogurt and 1/3 to the coconut yogurt. Fold the heavy cream into each until smooth.
