Will you make us breakfast? This is a request that I get every weekend. Now sometimes I go big. I'll pull out a cookbook and get working. The thing is, I don't always have time for an involved recipe. Sometimes I just wing it, which is why I am so excited to create a dish with sausage for theĀ Eckrich Rebel Without a Cookbook challenge! The idea is to work with what you have. Well, we had a few pizza crusts from the supermarket in the pantry, and we had veggies, cheese, eggs, and Eckrich Cheddar Smoked Sausage Links. We had the beginnings of a plan, and if I do say so myself, it turned out fantastic! The Eckrich Sausage and Egg Breakfast Pie was a smashing success. Here is how we made it…
The first thing to do is preheat your oven. The pizza shells that I bought said 400 degrees, so that is what we went with. While the oven heats, make the pie. Put the pizza shell on a baking sheet and brush the top with olive oil.
Next add your cheese. Make sure you evenly cover the pie, and don't overload it with too much of the melty stuff. The cheese is going to spread out quite a bit as it cooks.
Then we added the Eckrich sausage, onions, and bell pepper. Pop the pizza in the oven, and cook for about 7-10 minutes. You are not trying to completely cook the pizza in this step.
Once the pizza is about 3/4 cooked pull it out and carefully crack your eggs onto the pie. Now pop the pizza back in the oven for around 6 minutes, or until the egg whites have set.
When the eggs are cooked, season the sausage and egg breakfast pie with a little salt, pepper, and cilantro.
That's it! Now call everyone to breakfast and enjoy! There will be no leftovers.
