Beef Pasties Recipe

Making fresh food and changing things around is kind of a family thing and we love things with crust or puff pastry! Here are some of our faves: Chicken Pot Pie, Apple Cobbler, Apple Pie with Lattice Crust, Tempura Fried Cod, Nutella Puff Pastry and Sausage & Egg Breakfast Pie.  A pasty is a baked pastry typically filled with savory ingredients like meat, vegetables, and gravy. It's traditionally associated with Cornwall, England, but variations exist throughout the British Isles and beyond. We hope that this Beef Pasties Recipe post inspires you.

What is a pasty?

  • Hand-held, semi-circular pastry with crimped edges
  • Filling typically includes meat (beef, lamb, chicken), vegetables (potato, swede, onion), and sometimes gravy
  • Baked until golden brown and flaky
  • Traditionally eaten without cutlery, using the crimped edge as a handle

  1. Chop the onions and sauté them in a little bit of extra virgin olive oil along with a few tablespoons of barbeque sauce. Cook the onions until they are completely caramelized. This will add a lot of flavor to the hand pies. This is a crucial step and worth your time
  2. Once the onions are fully cooked, toss the meat and onions together, and slowly add in the bread crumbs/panko and barbeque sauce until you have a thick, slightly wet, and slightly sticky consistency. If needed, add a little more of one or the other until it feels right. I recommend wearing gloves to mix everything and then tossing them after, as it gives you a much more even mix. This way, you can be available at a second's notice to help kids or answer the phone if needed without having to stop and thoroughly wash your hands each time there is an interruption.
  3. Next, cut the thawed but not warm pastry sheets into thirds. Add enough filling to make a thick hand pie while still being able to close them up around the edges. Make sure they have a solid seal on them so they won't leak while baking.
  4. When they are done, you can individually wrap them in parchment paper and then in a freezer bag, and freeze them for a couple of months (although they are always consumed way before that here!).
  5. Bake them in a preheated oven for about 20 minutes or until the puff pastry is perfectly golden brown and the meat is cooked through (use a meat thermometer).

History of Pasties

  • Origins unclear, but references date back to 13th-century Europe
  • Initially enjoyed by wealthy classes with rich fillings like venison and seafood
  • Became popular with Cornish miners in the 17th-18th centuries due to its portability and ability to stay warm and edible underground
  • Miners' wives would prepare pasties with simple ingredients available, forming a complete and nutritious meal
  • The crimped edge served as a handle to avoid dirty hands contaminating the food
  • Sweet fillings are added for a dessert at the end (“tinners' pasties”)
  • Pasty gained popularity elsewhere with emigrating Cornish miners (e.g., Michigan)
  • Now considered a regional food specialty in Cornwall with Protected Geographical Status (PGS) in the EU

Pasties Modernity and Beyond

  • Pasties come in endless varieties, catering to diverse tastes and dietary needs
  • Popular fillings include vegetarian options, chicken, steak and cheese, curry, and more
  • Enjoyed as hand-held meals, snacks, or appetizers
