Blueberry Pancake Bites
- 2 cups flour
- 2 eggs
- 2 cups milk
- 2 tbsp sugar
- ¾ cup fresh blueberries
- Preheat oven to 350 F.
- In a bowl beat the flour, eggs, milk, and sugar, until no lumps are visible.
- Add the blueberries and carefully mix until fully incorporated.
- Pour the batter into a greased cupcake pan.
- Take to the oven and bake for 15 – 20 minutes.
- Serve and enjoy.
For blueberry pancakes for one, simply half the recipe. For blueberry cinnamon pancakes, add a half teaspoon of cinnamon to recipe.
