- Chop the onions and sauté them in olive oil, pepper, liquid smoke and a little bit of barbeque sauce. - Press evenly into your pans and then use a fork or something along the lines of what is shown in the image to poke a ton of holes into the loaf. This will help keep it from being too dense, cook slightly faster and allows the barbeque sauce you spread all over the top to really get in and add a ton of flavor!
- Cook in a preheated oven at 350 for about 35 to 45 minutes (depending on size of your pan, thickness and how your oven runs). Check to make sure the meat has reached the correct temperature for what you used.
- This made two 8×8 pans of meatloaf. I cooked both and we had one for dinner. Then I let the other completely cool before wrapping in thick tinfoil and placing in a freezer bag. To help avoid foods becoming frost burnt, make sure they are 100% cooled before freezing. This will help prevent condensation from building up as it freezes.
