Did you know that family meals eaten at home have been proven to benefit the health and wellness of children and adolescents, to fight obesity, substance abuse and to make families stronger – creating a positive impact on our communities and our nation as a whole?

I completely believe this. One thing that I have always insisted on as a family is that we must have dinner together every single night at our kitchen table. I love sitting down each night with my husband and kids so we can talk about our days. We talk about everything and many times we play board games or cards after dinner. This is the one time that I feel we are always connected to each other and disconnected from the rest of the world. And on the weekends, we like to have at least one family breakfast.

 

These bacon & egg cups are perfect for our weekend morning ritual.  They are easy to make, and best of all, everyone in the house loves them.  That is a big deal in our house, as there always seems to be at least one no vote for almost every recipe!

 

EASY BREAKFAST RECIPE: Bacon & Egg Cups

BACON & EGG CUPS

Makes 12

INGREDIENTS

  • 12 slices of bacon
  • 10 eggs
  • 1/2 cup cheddar cheese, shredded
  • 1 1/2 teaspoons fresh thyme, chopped
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

EASY BREAKFAST RECIPE: Bacon & Egg Cups

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Wisk the eggs, cheese, thyme, salt and pepper together.
  3. Spray a muffin pan with food spray. Line each cup with a piece of bacon, pushing the bacon onto the sides of the muffin tin.
  4. Fill each muffin tin about 3/4 of the way up with the egg mixture.
  5. Bake for about 30 minutes. The dish is ready when the eggs have set and are slightly golden.
