Overnight Steel Cut Oats with Almonds and Fruit
Ingredients
- 1 cup steel cut oats
- 2 cups of liquid, your choice of anything along the lines of milk, we used almond milk
- ¼ cup sliced almonds
- 1/3 cup of chopped prunes
- fresh strawberries for topping
Directions
- Add your liquid to the oats and chopped prunes, nuts… stir thoroughly, cover and refrigerate. About 1-3 hours later give it a quick stir to ensure the oats haven’t settled to the bottom (at this point they will have absorbed enough liquid to be fuller and wont separate again). The oats pictured rested in the refrigerator for about 12 hours total.
- You may choose to eat them cold or heat them on cold mornings (ours took about 2 minutes in the skillet). A quick mix in the morning, top with additional fresh fruit and nuts and you’re set!
- We had about a cup that was saved for the following morning. The dish stayed perfectly as it was the first morning, not even a little mushy!
