Coconut Macadamia Cookie Sandwiches filled with chocolate
There is no question around here that we are cookie lovers. In fact, one of our favorite things to do together as a family is to make cookies. These Coconut Macadamia Cookie Sandwiches filled with chocolate are no exception and they turned out beautifully!

Sift together the flour, salt and baking soda and set aside.
Cream together butter, sugars and eggs until smooth, add in the vanilla. Slowly start to add in the flour mixture. When fully combined start to mix in your almonds, macadamia nuts and coconut so they are even throughout the batter. Use an ice cream scoop for consistently sized cookies or wing it for a perfectly homemade looking cookie.
Space the dough about 3 inches apart. Bake for 10 minutes (every oven is different so keep an eye as you approach the 8 minute mark). You will want the cookies to be slightly under cooked for a perfectly chewy finish even a couple days later.
As soon as the cookies come out of the oven remove from the tray and place on a clean, cool counter. Let them rest there until fully cooled.
When the cookies are done and fully chilled start to melt your chocolate according to the package directions (microwave is fine). You’ll want to keep the chocolate slightly cooler so it has a thicker consistency. This will help it stay thick when you pour it onto your cookie, giving you a nice thick chocolate layer (instead of it running down the sides).
Place about two big spoonful’s onto the bottom of half your cookies and then add the tops (do a few at a time to make sure the chocolate starts to set up with the sandwich together.
Let the chocolate harden for a few hours before serving.
