Ingredients

  1. Add oil to a large skillet over medium-high heat.
  2. Salt and pepper chicken breasts on both sides. Once your pan is hot, add your chicken breasts to the hot pan and saute for 4 minutes on each side. Remove chicken from the skillet and set aside on a plate. Lower heat to medium.
  3. Add chicken/veggie broth, lime juice, can of coconut milk, minced garlic, salt and pepper to the skillet. Use this time to deglaze the pan with the sauce.
  4. Add the chicken breasts back to the skillet with the sauce. Cover and let simmer on medium heat for 5 minutes.
  5. When you’re ready to serve, add your veggies and rice to your plate. Top with your delicious chicken and that creamy coconut sauce. Sprinkle with chives or any kind of herb will do.
