This recipe has become an all time favorite around our home. It's comfort food with a twist, think the cool Italian cousin of the Grilled Cheese Sandwich. Yes, it's a Grilled Cheese Panini!
Making this Grilled Cheese, Avocado & Pepperoni Panini at home it's super easy, even easier than making a grilled cheese sandwich!
So this is perfect for crazy busy weekdays when you just don't feel (or don't have the time) to cook an elaborated dinner but still want something filling, delicious and that everyone loves.
The first part of the Grilled Cheese, Avocado & Pepperoni Panini: The bread. For this recipe, the best bread is a crusty one. While it's also delicious with traditional sandwich bread or with slices of a huge loaf, in my experience the best result is with crusty bread. I usually buy a lot of it at the supermarket bakery and then I freeze it. Freezing bread is super easy and it allows you to store it for 6 to 8 months, so it's definitely something worth to stock up.
After you have your bread open it's time to fill it. The most important ingredient is the cheddar cheese, then I add some mashed avocado to make it creamier, some pepperoni slices and a thick tomato slice. I close the sandwich and drizzle the top with just a bit of oil. I like to use olive oil but any oil you have on hand works out.
Then comes the cooking part, you can grill it just like you would with a grilled cheese sandwich or you can speed things up and make it in the oven. I just place all the sandwiches into a baking pan and take it to the oven for 15 minutes. Making it in the over is so much faster and it's hand off cooking (my favorite kind of cooking!).
Once your Grilled Cheese, Avocado & Pepperoni Panini is done you can cut it in half so it looks like the panini they serve in restaurants and serve it as is or with some potato chips.
