Directions

  1. Chop the onions and sauté them in a little bit of extra virgin olive oil along with a few tablespoons of barbeque sauce. Cook the onions until they are completely caramelized. This will add a lot of flavor to the hand pies. This is a crucial step and worth your time
  2. Once the onions are fully cooked, toss the meat and onions together, and slowly add in the bread crumbs/panko and barbeque sauce until you have a thick, slightly wet, and slightly sticky consistency. If needed, add a little more of one or the other until it feels right. I recommend wearing gloves to mix everything and then tossing them after, as it gives you a much more even mix. This way, you can be available at a second's notice to help kids or answer the phone if needed without having to stop and thoroughly wash your hands each time there is an interruption.
  3. Next, cut the thawed but not warm pastry sheets into thirds. Add enough filling to make a thick hand pie while still being able to close them up around the edges. Make sure they have a solid seal on them so they won't leak while baking.
  4. When they are done, you can individually wrap them in parchment paper and then in a freezer bag, and freeze them for a couple of months (although they are always consumed way before that here!).
  5. Bake them in a preheated oven for about 20 minutes or until the puff pastry is perfectly golden brown and the meat is cooked through (use a meat thermometer).
