Rustic Tuna & White Bean Salad

Rustic Tuna and White Bean Salad

As a busy family, we are always looking for healthy, delicious and easy dinners. This recipe makes dinner for four but we routinely double it to get dinner for more or you can half for dinner for one (or two) with leftovers.

2 (5 oz. pouch) of  Bumble Bee® Premium Albacore Tuna drained
2 cans white cannellini beans, rinsed and drained
8 cups mixed greens (we used Bibb, Endive and Red Leaf lettuce)
2 small cucumber, chopped
1/2 cup scallions, sliced finely
1/2 cup of basil leaves finely chopped
6 small heirloom tomatoes cut into quarters (we used German Red Strawberry)
1/2 cup extra-virgin olive oil
1/4 cup of Balsamic vinegar (we used the 25 year old bottle that we bought in Italy)
2 medium sized lemons
coarse salt and freshly ground pepper

Rustic Tuna and White Bean Salad Ingredients

  1. In a large mixing bowl, add Bumble Bee® Premium Albacore Tuna, beans, scallions, cucumber, basil, heirloom tomatoes and 1 tablespoon of lemon zest. Mix together. I do this with my hands.
  2. In a small bowl, add the olive oil, Balsamic vinegar and 4 tablespoons of lemon juice. I used the salt grinder and ground about 1 1/2 teaspoons of salt plus 1 1/2 tablespoon of pepper into the bowl. Whisk everything together. Sometimes I add more salt and pepper to taste.
  3. Add lettuce to mixture in large bowl and pour dressing over everything. Toss well to combine.
  4. Serve immediately or cover tightly refrigerator.

Now premium Albacore Tuna from Bumble Bee is available in a convenient vacuum-sealed pouch. Simply tear open to add your favorite tuna to sandwiches, salads and seafood recipes.

Easy to open, no messy draining!
