Tangy Twist on Tradition: Easy Homemade Mango Chutney

We're all about throwing down for our peeps! We love having folks over and getting the party started. But the real fun comes from inventing new recipes or putting a fresh spin on classics, which is exactly what we did this past Memorial Day. We wanted to fire up the grill, but also keep it chill with finger foods. So, pork was the clear winner.

Last weekend, my hubby and I concocted the perfect sandwich – it's all about grab-and-go goodness! No muss, no fuss, just pure mingling and good times. What's not to love? We hope this Mango Chutney recipe gets your creative juices flowing for your next shindig!

Make Your Own Zesty Mango Chutney

Ingredients

  • 1 teriyaki pork tenderloin
  • 1 mango
  • 3 peaches
  • 2 tsp finely chopped ginger
  • 1 tbsp orange marmalade
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 1/4 cup water
  • 1 tbsp chopped mint
  • Lettuce
  • King's Hawaiian Hamburger Burger Buns

Directions to make Mango Chutney

  1. Preheat grill.
  2. While the grill is heating, Cut the mango and peaches into approximately ½ inch cubes. Place the mango, peaches, ginger, marmalade, sugar, salt, and water into a saucepan.  Cook over a medium heat.
  3. The Chutney is done when the fruit is soft and the liquid has thickened.  Remove from the flame and stir in the chopped mint.  Reserve.
  4. Cook the pork tenderloin on the grill to the desired doneness. Allow it to rest for 10 minutes after cooking, then thinly slice.
  5. Toast the King's Hawaiian Hamburger Buns on the grill.
  6. Place lettuce on the bottom bun.  Place sliced pork tenderloin on top of the lettuce.  Place chutney on top of the pork.  Place the top of the bun on the sandwich.
  7. Enjoy!
