- Chop the onions and sauté them in a little bit of extra virgin olive oil along with a few tablespoons of barbeque sauce. Cook the onions until they are completely caramelized. This will add a lot of flavor to the hand pies. This is a crucial step and worth your time
- Once the onions are fully cooked, toss the meat and onions together, and slowly add in the bread crumbs/panko and barbeque sauce until you have a thick, slightly wet, and slightly sticky consistency. If needed, add a little more of one or the other until it feels right. I recommend wearing gloves to mix everything and then tossing them after, as it gives you a much more even mix. This way, you can be available at a second's notice to help kids or answer the phone if needed without having to stop and thoroughly wash your hands each time there is an interruption.
- Next, cut the thawed but not warm pastry sheets into thirds. Add enough filling to make a thick hand pie while still being able to close them up around the edges. Make sure they have a solid seal on them so they won't leak while baking.
- When they are done, you can individually wrap them in parchment paper and then in a freezer bag, and freeze them for a couple of months (although they are always consumed way before that here!).
- Bake them in a preheated oven for about 20 minutes or until the puff pastry is perfectly golden brown and the meat is cooked through (use a meat thermometer).
