Sure…it's fall but I just love anything citrus year round and we always have lemons around the house. I think that we have truly perfected our lemon curd recipe and in fact, we use it time and time again. It is the base I think everyone should have in their kitchen. We make lemon curd trifle, lemon tartlets and even lemon poppyseed scones all featuring this delicious concoction. Seriously give it a try once. You'll be hooked. Anyway, back to today's recipe: Lemon Curd Mousse Recipe.
This is simple dessert recipe that is easy to create with store-bought lemon curd, although your favorite lemon curd can be substituted in and really should be used without any problem. We really prefer homemade lemon curd as the flavors just seem to pop. Any mousse requires gentle handling during preparation, as the whipped cream can quickly deflate if the mixture isn’t carefully taken care of. Likewise, this mousse recipe does not store well; the air whipped into the cream will escape with time, causing the dessert to deflate. We recommend storing for no longer than 12 hours and not at all, if possible.

Vigorously whip the cream in a blender on high speed until stiff peaks form. Stiff peaks are present when the whipped cream stands up straight on the whisk of the blender without sagging when tipped upside down.
In a separate bowl, gently fold 1/3 of the lemon curd into the whipped cream.
After the first 1/3 of the lemon curd is fully incorporated, add in the rest of the curd, gently folding in to the rest of the mixture until incorporated. Serve immediately.
