I am also a huge fan of anything orange. I have orange soap, shampoo, perfume, face wipes and so much more. There is just something so refreshing about the taste and smell of anything citrus.   1. Combine 1 ¼ cup of pancake mix, baking soda and baking powder together and set aside. Blend together butter and sugar until smooth.
  2. Add egg, vanilla, oils and zest. Blend well. Slowly combine dry ingredients while mixing. If dough is too sticky to roll into ball shapes, add a little more pancake mix until it's more stiff and easy to roll.
  3. Roll into balls and place of parchment lined cookie sheet or ungreased cookie sheet.
  4. Bake at 375 for 8-10 mins or until golden brown around the edges.
  5. Store in airtight container. Cookies are good for 3-4 days.

We also suggest juicing the orange before getting that zest so you aren't wasting fruit. This cookies are so easy to make and delicious.
