I just love anything citrus. I love it in foods, I love it in products and I love the bright, beautiful colors as well. In fact, I am such a fan of lemon curd that I have a series of recipes using curd in some way: Lemon Curd Tart, Lemon Mousse, Lemon Pound Cake, Lemon Poppyseed Scones, Lemon Tartlets and Lemon Curd Trifle. I am also a huge fan of anything orange. I have orange soap, shampoo, perfume, face wipes and so much more. There is just something so refreshing about the taste and smell of anything citrus. - Combine 1 ¼ cup of pancake mix, baking soda and baking powder together and set aside. Blend together butter and sugar until smooth.
- Add egg, vanilla, oils and zest. Blend well. Slowly combine dry ingredients while mixing. If dough is too sticky to roll into ball shapes, add a little more pancake mix until it's more stiff and easy to roll.
- Roll into balls and place of parchment lined cookie sheet or ungreased cookie sheet.
- Bake at 375 for 8-10 mins or until golden brown around the edges.
- Store in airtight container. Cookies are good for 3-4 days.
We also suggest juicing the orange before getting that zest so you aren't wasting fruit. This cookies are so easy to make and delicious.
