Creamy Ranch Pasta Salad

Ingredients

• 8 ounces of uncooked bow-tie pasta
• 8 ounces of sour cream
• 1 package of powdered Fiesta ranch dip mix
• juice from one lime
• 1 carrot
• 1 cucumber
• salt to taste
• pepper to taste
• cilantro for garnish

Directions

1. Boil the pasta according to the instructions on the package.
2. Peel the carrot and cucumber, cut the cucumber and carrot in half, and each half into halves. Dice the carrot and cucumber strips into small pieces and set aside.
3. Mix the lime juice, sour cream, and ranch mix in a small bowl.
4. Once the pasta has cooked, drain and rinse immediately with cold water until the pasta turns cold.
5. Mix the carrots, cucumber, cold pasta, and ranch mix in a large bowl until well combined. Add salt to taste.
6. Garnish with cilantro or serve with chips.
