Ingredients

• 3 cups watermelon, cubed
• 1 (about 1 ½ cups) English cucumber, diced
• ½ cup red onion, thinly sliced
• 2 tbsp fresh mint, thinly sliced
• ¼ cup olive oil
• 2 tbsp fresh lime juice
• ½ tsp kosher salt
• ¼ tsp freshly ground pepper
• ½ cup Feta cheese, crumbled
