Blackberries begin to ripen in early summer, and as the warm days go on they become more and more bountiful. We have picked blackberries several times and once the kids eat their fill, I always make certain to freeze several portions so that we have them later in the summer as well. Blackberries work well in many recipes. They bake as well as they freeze and can also be used to make a delicious jam. Blackberries are sweet with strong, tart overtones making them taste a little sharper than raspberries. Take advantage of their presence during these hot months by using them in a refreshing mojito or a blackberry mojito pitcher. 1. Sprinkle blackberries in the bottom of four glasses, then muddle or smash them with the back of a fork to extract their juice. Alternately use a large glass pitcher and add all ingredients.
2. Add 4-5 mint leaves by breaking them up to release the mint oil and muddle them as well along with a tablespoon of simple syrup. Gently muddle the mint. Add two lime wedges and muddle them.
NOTE: Proper muddling of your mint is the key to a flavorful minty drink or one that tastes like grass.
3. Fill each glass with ice, then add a shot of rum in each.
4. Mix well by using a mixing cup or another glass. Pour the mixture back and forth a few times to fully mix the ingredients.
5. Top the glasses with soda water, and garnish with mint and lime quarters before serving.
NOTE: You can play around with these ingredients to make a mojito that is perfect for you. For instance, I prefer less sugar so I use a teaspoon but when I make them for parties, I use a tablespoon.
