One of my husband's favorite things is a berry danish. He loves danishes so much that is actually one of the first things I remember about him. He also loves any kind of fresh berries including blueberries, strawberries and blackberries. - Set the frozen pastry sheet out to soften enough to be able to work with it. Depending on the room temperature this can take 20 to 60 minutes.
- Add the berries to a medium saucepan and heat to medium low, allow the berries to soften and reduce for a little bit. Remove from the heat and mix in the flax meal and chia seeds, they absorb some of the liquid, they longer they sit, the more they will soak up.
- In a separate dish, mix together the cream cheese spread or alternative and course maple sugar.
- Line a large baking tray with parchment paper and unfold the thawed pastry sheets. Cut into equal sized pieces. This step is totally optional, but I’ve found that the pastries rise better when I make a quick light cut into the pastry… Basically, these where roughly square/rectangle, so I lightly cut a smaller square/rectangle about ½ an inch inside the pastry (you can see this in images 3 & 4, try not to cut all the way through). You’ll put the filling in the center and then the pastry should rise perfectly around this vs being completely weighted down by the filling.
- Spread a bit of the cream cheese in the center of the inner square/rectangle then top with a large spoonful of the reduced berries.
- Optional, drizzle or use your finger and spread a little bit of the pure maple syrup around the outer edge of the pastry.
- Bake at 400 degrees for about 12 to 14 minutes, or until really puffy and golden brown.
