  1. Prepare the filling: Peel, core, and slice the apples into thin wedges (about ¼ inch thick). In a large bowl, combine the apples with 1/3 cup granulated sugar, 1/3 packed brown sugar, 3 tbsp flour, and 1 tsp ground cinnamon. Toss everything together until the apples are evenly coated.
  2. Make the topping: In a large bowl, mix 3 cups flour, pecans, oats, 1 1/3 cups brown sugar, 1/2 cup granulated sugar, 1 tbsp cinnamon, and 2 tsp salt. Add 12 ounces of butter and mix until large crumbs form.  Set aside.
  3. Spray individual soufflé dishes (or small cast iron pans) with Pam.  
  4. Fill each dish 3/4 full with apple filling.  Top with the reserved crumb mixture.  
  5. Bake at 350 degrees for approximately 15 to 20 minutes, until the filling is bubbling and the crumb crust is brown.
  6. Remove from the oven and allow to cool for 10 minutes.  Top with ice cream if so desired and eat.

Tips for Making Apple Cobbler

  • You can add a squeeze of lemon juice to the apples to prevent browning.
  • For a richer flavor, substitute brown sugar for half of the granulated sugar in the topping.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk and letting it sit for 5 minutes.
  • This recipe can be easily doubled to serve a larger crowd.
