- Prepare the filling: Peel, core, and slice the apples into thin wedges (about ¼ inch thick). In a large bowl, combine the apples with 1/3 cup granulated sugar, 1/3 packed brown sugar, 3 tbsp flour, and 1 tsp ground cinnamon. Toss everything together until the apples are evenly coated.
- Make the topping: In a large bowl, mix 3 cups flour, pecans, oats, 1 1/3 cups brown sugar, 1/2 cup granulated sugar, 1 tbsp cinnamon, and 2 tsp salt. Add 12 ounces of butter and mix until large crumbs form. Set aside.
- Spray individual soufflé dishes (or small cast iron pans) with Pam.
- Fill each dish 3/4 full with apple filling. Top with the reserved crumb mixture.
- Bake at 350 degrees for approximately 15 to 20 minutes, until the filling is bubbling and the crumb crust is brown.
- Remove from the oven and allow to cool for 10 minutes. Top with ice cream if so desired and eat.

Tips for Making Apple Cobbler
- You can add a squeeze of lemon juice to the apples to prevent browning.
- For a richer flavor, substitute brown sugar for half of the granulated sugar in the topping.
- If you don't have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk and letting it sit for 5 minutes.
- This recipe can be easily doubled to serve a larger crowd.
