Almond Joy is one of my favorite candy bars. I LOVE them and I get especially excited around Halloween because I tend the get quite the haul of Almond Joy candy bars from my kids. If they get to pick their candy from a bowl, they will always pick an Almond Joy for me. I came up with this Almond Joy Brownie Bites recipe as the perfect way to use that leftover Halloween candy and they are just AMAZING. Energy Bites with a Classic Twist Almond Joy Protein Balls
Ingredients for the almond joy bites nut butter balls recipe
- ¼ cup unsweetened coconut flakes
- ½ cup almond butter
- 1 cup old-fashioned oats
- ¼ cup ground chia seeds
- ¼ cup honey
- ¼ cup dark chocolate chips

- To prep, line a baking sheet with wax paper and have your coconut flakes ready in a small bowl.
- In a large mixing bowl, fold together almond butter, oats, chia seeds, and honey. You may add more honey and/or oats depending on how sticky your batter is coming out. You’ll want it to feel like wet sand (so that you can roll them into bites).
- Fold in chocolate chips and start rolling into 1-inch spheres. Coat with coconut flakes and set on a lined baking sheet. Repeat.
- Chill for at least one hour and enjoy.
