Mmm….mashed potatoes. - Preheat oven to 350 degrees.
- Follow the instructions for the mashed potatoes and once they are cooked, refrigerate them for at least an hour. Cold potatoes are much easier to work with.
- Cook the bacon well and crumble it up.
- After the mashed potatoes are cooled down, mix shredded cheese, bacon and 1 egg into the potato mixture.
- With the remaining eggs, whisk them together in a bowl. Put the bread crumbs in a narrow bowl or plate.
- Create small balls. We used a cookie scoop and it produced perfect sized balls. Dip the balls in the egg mixture, then the bread crumbs and then back into the egg mixture.
- Bake for 25-30 mins or until a nice golden brown.
- To make the ranch dip, pour one ranch packet into the sour cream and stir well.
- Serve this within 15 minutes of removing from the oven. Dip the balls into the ranch dip and enjoy!
