Baked Mashed Potato Balls

Ingredients

• 1 box instant mashed potatoes
• 1/2 cup shredded cheddar cheese
• 6 pieces of bacon, crumbled
• 5 eggs
• 1 cup Panko bread crumbs
• 1 container sour cream
• 1 Hidden Valley Ranch dressing seasoning packet

Directions

1. Preheat oven to 350 degrees.
2. Follow the instructions for the mashed potatoes and once they are cooked, refrigerate them for at least an hour. Cold potatoes are much easier to work with.
3. Cook the bacon well and crumble it up.
4. After the mashed potatoes are cooled down, mix shredded cheese, bacon and 1 egg into the potato mixture.
5. With the remaining eggs, whisk them together in a bowl. Put the bread crumbs in a narrow bowl or plate.
6. Create small balls. We used a cookie scoop and it produced perfect sized balls. Dip the balls in the egg mixture, then the bread crumbs and then back into the egg mixture.
7. Bake for 25-30 mins or until a nice golden brown.
8. To make the ranch dip, pour one ranch packet into the sour cream and stir well.
9. Serve this within 15 minutes of removing from the oven. Dip the balls into the ranch dip and enjoy!
