Grilling Thick Cut Pork Chops | Island Pork Recipe
Grilling Thick Cut Pork Chops
It's summer and in our family that means our grill is working over time. Every single thing that we can make on our grill, we do it. We are constantly searching for more and more things that we can grill with success. Grilled watermelon or grilled salad, anyone? Once we got our Kamado grill, we basically needed an outside kitchen because we grill out almost every night of the week in the summer. Needless to say, it always smells good in our neighborhood. Whether you wanted brined pork chops on the grill, basted pork chops or even moist grilled pork chops, we hope that you love our Grilling Thick Cut Pork Chops | Island Pork Recipe.
This island pork chop recipe is a family favorite and it is one of my personal favorites as well. The pork chops are juicy and delicious. We all know that leaving that bone is means a ton of added flavor. And by using ingredients like pineapple and mango, we add natural enzymes to our marinade that will tenderize our meat. This Strawberry Pork Bruschetta recipe is another of our faves.
Grilling Thick Cut Pork Chops | Island Pork Recipe | Moist Grilled Pork Chops
Ingredients for the basted pork chops
- 1 cup light soy sauce
- 1 1/2 cups sugar in the raw
- 2 tablespoons toasted sesame oil
- 3 tablespoons garlic, chopped
- 3 tablespoons ginger, peeled and chopped
- 1/2 bunch cilantro, chopped
- 1 bunch green onions, sliced
- 1 small can crushed pineapple
- 1 mango, chopped
- 2 tablespoons Mae Ploy sweet chili sauce
- 1 lemon, juiced
- 1 limes, juiced
- 1 tablespoon sesame seeds
- 6 thick center cut pork chops
Directions for the brined pork chops on the grill
- Place all of the marinade ingredients in a blender. Blend until all ingredients are incorporated. (Note: You are not trying to liquify all of the ingredients; the marinade is ready when the ingredients have a fine chopped look.)
- Place pork chops in a container suitable for holding both the chops and marinade. Pour about 3/4 of the marinade over the chops and refrigerate for 8 hours. Reserve the rest of the marinade.
- Prepare your grill. Cook the pork chops over a medium high heat to desired doneness. Periodically baste the pork chops as they cook with the reserved marinade. The National Pork Board recommends that you cook your pork chops like a steak, to an internal temperature between 145°F (medium rare) and 160°F (medium), followed by a three-minute rest.
- Eat. Share with friends and prepare to be showered with accolades!

Your pork chops look so delicious, and I love grilling pork because it tastes so good. I have my recipe here:
1/2 cup water 1/3 cup light soy sauce 1/4 cup vegetable oil 3 tablespoons lemon pepper seasoning 2 teaspoons minced garlic 6 boneless pork loin chops, trimmed of fat. Mix water, soy sauce, vegetable oil, lemon pepper seasoning, and minced garlic in a deep bowl; add pork chops and marinate in refrigerator at least 2 hours.
Preheat an outdoor grill for medium-high heat and lightly oil the grate.
Remove pork chops from the marinade and shake off excess. Discard the remaining marinade.
Cook the pork chops on the preheated grill until no longer pink in the center, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
