  1. My favorite way to start pretty much every recipe in our Instant Pot is to fully sauté and brown finely chopped onions. They add an incredible full bodied and rich flavor to all dishes. Do this with the oil, onions, smashed garlic, thyme salt and pepper. Once cooked through and golden brown, add the broth or stock and honey. Stir everything to make sure it is properly combined and then lay the chicken in the liquid and place the carrots around the chicken.
  2. Use the Instant Pot’s Poultry setting and adjust time to 7 minutes (the actual cook time required does depend on the size and total weight of the chicken so adjust up or down by 1 minute if you have larger chicken pieces or adjust down if needed for smaller pieces). Lock the lid and prepare your sides, we served this with the carrots and rice.
  3. When the timer has gone off you will still need and want to wait for the pot to natural pressure release (NPR). This could take about 15 minutes or so, but worth the wait. NPR will help hold all of the moisture in the meat and give you a really nice finished piece of chicken.
  4. Once the Instant Pot pressure is released and the lid unlocks, you can enjoy the meal as is or remove the chicken and switch the setting over the sauté mode and reduce the remaining liquid and to a thicker and really rich sauce.
