Ingredients

  • 20 golf ball sized potatoes, scrubbed and cut in half so that you have a halves that are more flat and less deep
  • 6 tbsp avocado oil, divided
  • 1 package quality bacon
  • ½ cup finely chopped sweet onion, sautéed
  • 2 cups steamed cauliflower
  • 2 yellow carrots (orange will work-but will change the color in a more noticeable way), steamed
  • 1 golden beet, steamed
  • 4-8 cloves of garlic
  • 2 tbsp of chives for garnish
  • salt to taste
  • pepper to taste

  1. Cook the bacon so it is on the crispy side, pat to remove excess grease, crumble and set aside.
  2. Lay the prepped potatoes on a large baking sheet, cut side up, and drizzle with 3 tablespoons of the oil. Sprinkle the sea salt and pepper on. Bake at 450 degrees for about 20 minutes, then flip so they are cut side down and bake another 20 minutes or until golden brown and fully cooked. I cooked the garlic with the potatoes, but you could also cook it with the onions.
  3. Allow the potatoes to cool a little while you prepare the rest of the filling.
  4. In a nonstick pan over high heat, add the other three tablespoons of oil, watch closely, allow the oil to get rather hot-without smoking. When avocado oil is heated to this point it starts to take on a buttery flavor. Turn the heat down to medium low and immediately toss in the cauliflower. You want to almost fry it-be sure not to let it burn though.
  5. Add all of the cauliflower and leftover oil to a large blender or food processor, along with the cooked onions, garlic, carrots and beets. Blend on high until you have a super smooth and creamy texture. Let rest in the blender while you do the next step.
  6. When the potatoes have cooled enough to handle, carefully scoop out most of the insides and add to the blender. Blend just until combined so potato doesn’t become too gelatinous.
  7. Scoop the super smooth vegetable mixture back into the potato skins, add the bacon and bake for about 10 minutes at 400 degrees or until warmed through.
  8. Sprinkle with cut chives and enjoy!
