Chicken Nacho Bites
I am always looking for quick dinner solutions for our busy family. We are pretty much scheduled every single day of the week. We always have a lot going on.
I especially like dinners where my kids can help put them together. This Chicken Nacho Bites recipe can easily be assembled by little hands and they taste great.
CHICKEN NACHO BITES
1 Bag Scoops Tortilla Chips
2 Chicken Breasts, diced into 1/4” pieces
1 Cup Shredded Cheddar Cheese
1 Can Chopped Green Chilies (4oz.), drained well
½ Onion, diced
1 Can Black Olives, sliced
2 Tbsp. Greek Yogurt
2 Tbsp. Mayonnaise
½ teas. Caldo de Tomate
¼ teas. Garlic Powder
¼ teas. Ground Cumin
¼ teas. Chili Powder
¼ teas. Black Pepper
8-10 Sprigs worth of Cilantro leaves minced
1 Tbsp. Oil
In a pan over medium high, heat oil until shimmery. Add Chicken and cook until no longer pink inside, approximately 3-4 minutes. Drain and remove to bowl.
In same bowl as chicken add everything except for the Scoops, Olives and ¼ of the Cilantro. Mix to combine.
Put about a teaspoon of the mixture into a scoop and place on a low rimmed baking pan. Repeat until out of mixture.
Bake at 350˚ for 7-10 minutes, until cheese is melted and heated through.
Sprinkle with reserved Cilantro.
Place on Olive slice on each Scoop, you can leave it off some of them if someone doesn’t like Olives.
