We eat a lot of chicken in this house. We all love chicken. The challenge is to come up with new recipes so that we never get tired of eating chicken and with the launch of Pinterest years ago, that never seems to be a challenge. I saw a great recipe for Buffalo Chicken Wings a few weeks ago and it got me to thinking that this would also make a great recipe for leftover chicken. My daughter requested that I make taquitos so the idea of Three Cheese Buffalo Chicken Taquitos was born.

Spice is such a personal thing when it comes to food. Some people like no spice, some people like the hottest hot sauce known to man and others, like me, prefer a happy medium. We used wing sauce in our recipe but you can easily substitute your favorite hot sauce and make the necessary adjustments to make it a wing sauce. This is a very versatile recipe in that you could easily switch this out with steak and a white, melty cheese or even make it with veggies.

Three Cheese Buffalo Chicken Taquitos

Ingredients

Three Cheese Buffalo Chicken TaquitosDirections

  1. Mix together cream cheese and buffalo sauce. Stir in blue cheese, chicken, cheddar cheese, and celery.
  2. Cut flour tortillas in half. Spread 1 tbsp mixture onto each half, leaving 1/2” around the edge.
  3. Starting at the flat end, roll tightly, tucking in corners. Seal by rubbing a small amount of water around edge with your finger or a small brush.
  4. Heat oil in medium skillet. Working in small batches, place tortillas into hot oil and turn until browned on each side.
  5. Garnish with additional chopped celery, buffalo sauce, and blue cheese.

    Although I like experimenting with cooking ethnic foods, I’ve never tried taquitos. Wow, have I been missing out, and also, you are one good cook!!!! I’d like to try making this – not so hard, esp for how yummy it looks!
