We love scampi. Even my kids love it but it’s a pain to cook. I hate flipping one by one, and then if you cook it just a little too long it’s rubbery. I have come up with a much simpler way to cook it, and being on a stick makes it a super fun and family-friendly dish. This recipe is delicious, incredibly filling, and can easily be made even lighter by decreasing the butter and increasing the lemon. Serve over rice, a hearty serving of fettuccine or linguine like we did or completely scrap the starch and serve with garlic bread as an appetizer. Simple Oven Baked Shrimp Scampi Recipe
Ingredients

- Preheat oven to 450°
- If you didn’t buy them that way already, peel, devein, and remove tails from shrimp.
- Soak wooden skewers in water, just like you would for the grill.
- Cut skewers in half to make individual portions.
- Finely chop parsley.
- Peel, and crush or mince garlic cloves
- Slide 4-5 shrimp on each skewer.
- Lay shrimp in a baking dish.
- Chop butter into small pieces, and scatter on top of the shrimp.
- In a small bowl whisk; garlic, lemon juice, white wine, and parsley until well combined.
- Pour mixture evenly over all shrimp.
- Cook for 6-7 minutes, flip shrimp, and allow to cook for an additional 2-3 minutes.
