Although it can be hot and sticky during the summer, it's still one of my favorite seasons. Note: You can roast the pepper on the grill prior to cooking the shrimp. Just cook it over a medium heat, turning periodically, until all of the skin is blistered and blackened. Then place the pepper in a bowl and cover with plastic wrap. Let it steam for about 15 minutes. At this point, you should be able to easily remove the skin and seeds. Don't rinse under water (you will rinse away flavor)…it's ok if the pepper is a bit “rustic” looking.
