Our Fave: Gorgonzola and Pear Pizza
Ingredients
- 4 Bays English Muffins, split and lightly toasted
- 3 tablespoons olive oil
- 1 cup shredded Italian cheese blend
- 2/3 cup crumbled gorgonzola cheese
- 1/2 cup coarsely chopped walnuts
- 1 bosc pear, cut into 16 thin slices
- 2 teaspoons lemon juice
- Sea salt (optional)
Directions
- Heat oven to 400 degrees F.
- Place toasted muffin halves on a foil-lined baking sheet. Drizzle olive oil and sprinkle the Italian cheese, gorgonzola and walnuts over muffins.
- Coat the pear slices lightly with lemon juice; place over muffins.
- Bake 10 minutes or until cheese melts.
- Sprinkle sea salt lightly over muffins if desired. Serves 8 as an appetizer, 4 as a light main dish (serve with a tossed green salad)

I love the idea of using English muffins to make mini pizzas. I love the one with shrimp and bacon, but will leave out the pineapple bits. I will get some of these English Muffins and start getting creative in the kitchen.

Such a brilliant and nifty idea! I never thought of using english muffins for the bread. I tries this on a tasty bread 🙂 turned out good but this should be better. Will try this weekend.
