Marinated Mojito Pineapple Salad Recipe
Ingredients
- 4 cups pineapple, diced
- 1 shot rum
- 1 lime, juiced
- 1/4 cup mint leaves, thinly chopped
- simple syrup, as needed for taste
Directions
- Combine all ingredients in a bowl and stir to mix.
- Refrigerate a minimum of one hour to mix the flavors, more time if available.
- Feel free to add a tablespoon or two of simple syrup if the pineapple taste is not sweet enough for you.
- Serve cold with additional mint leaves to garnish.
You can substitute other types of fruits like watermelon or any other type of melon although our favorite is definitely this delicious pineapple when it is in season.
