I can't believe we are *almost* already in fall! I feel like if I'm trying to soak in as much as the short days we have left of Summer, but at the same time, I just can't stop thinking about all the spices and flavors and warm recipes that come with the fall months. Things like lentils and spiced chicken, and easy weeknight dinners perfect for the busy season, you know something like a big Lentil Bowl that tastes like warm wishes and tight hugs. Try this Lentil Bowl Recipe.

I'm going to be honest with you guys, this is flavorful so if you like bland recipes this is not for you because this is loaded with spices. The lentils, the chicken even the carrots and the cabbage!

It's also incredibly versatile ad you can tweak it and change it depending on the leftovers you have on hand. Have a bit of rice left from last night? Throw it here! Maybe you have a bit of shredded cheese begging to be used or even some other vegetables that are about to go bad. This can take it all in.

Mainly because this is a lentil bowl after all, emphasis on the bowl part, and we all know that bowls are pretty much the best vessel to be filled with leftovers and still make it look cohesive and also partly because the lentils + the chicken are so flavorful on its own that you can add more things and still have a dish that packs a punch.

For me, the secret to making things quick and still make it homemade is using canned lentils but simmering them for a couple of minutes with things like olive oil, and onion and a sprig of rosemary or two.

And the chicken? Well, I'm pretty sure the chicken could be a dinner on its own.

Ingredients

For the lentils:

  • 1 cup lentils
  • ¼ onion, crushed
  • salt to taste
  • drizzle olive oil
  • 2 cups water
  • 2 Rosemary sprigs

For the chicken:

  • 2 tbsp butter
  • 2 tsp dried cumin
  • 1 tsp garlic powder
  • drizzle olive oil
  • 1 shredded carrot
  • 1 cup grated red cabbage
  • 1 chicken breast

Directions

  1. Wash the lentils.
  2. In a pot, boil the olive oil, salt, and onion for 3 minutes.
  3. Add the lentils and rosemary sprigs. Add the water, cover and simmer for 20 minutes. Set aside to cool down.
  4. Melt the butter in a pan or skillet.
  5. Add the chicken and sprinkle the condiments (cumin, garlic, and salt).
  6. Cook for 5 minutes on each side or until golden-brown.
  7. Serve in a bowl with the lentils, cabbage, and carrots.
  8. Enjoy.

    This looks good!!! I’m a huge lentil fan! They do cook fast, but I typically make them a day or so before I plan on making a recipe with them. I didn’t realize you can buy them cooked already!
