Herb Crusted Halibut with Saffron Rice

Herb Crusted Halibut with Saffron RiceHERB CRUSTED HALIBUT WITH SAFFRON RICE

INGREDIENTS FOR THE RICE

  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves of garlic, chopped
  • 2 tablespoons extra virgin olive oil
  • 6 pieces asparagus, chopped large
  • 2 cups chicken stock
  • 1 teaspoon thyme
  • pinch saffron
  • salt and pepper to taste
  • 2 cups Minute Rice
  • 6 grape tomatoes, sliced in half

Halibut RiceINGREDIENTS FOR THE FISH

  • 2 pieces of Halibut
  • 1 teaspoon thyme, chopped
  • 1/2 teaspoon of basil, chopped
  • salt and pepper to taste
  • 1 tablespoon olive oil

DIRECTIONS

  1. In a medium pot, saute the onion, carrot, celery, and garlic in olive oil until soft.  Add the asparagus, chicken stock, thyme, saffron, salt, pepper, and chicken stock.  Bring to a boil, add the Minute Rice, cover, and remove from the flame.  Let stand for 5 minutes.
  2. Season the Halibut with salt, pepper, and thyme.  Saute over a medium high flame with olive oil.
  3. Scoop the rice onto a plate and garnish with the sliced tomatoes.  Top with the Halibut and enjoy.
