Herb Crusted Halibut with Saffron Rice

HERB CRUSTED HALIBUT WITH SAFFRON RICE
INGREDIENTS FOR THE RICE
- 1 onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves of garlic, chopped
- 2 tablespoons extra virgin olive oil
- 6 pieces asparagus, chopped large
- 2 cups chicken stock
- 1 teaspoon thyme
- pinch saffron
- salt and pepper to taste
- 2 cups Minute Rice
- 6 grape tomatoes, sliced in half
INGREDIENTS FOR THE FISH
- 2 pieces of Halibut
- 1 teaspoon thyme, chopped
- 1/2 teaspoon of basil, chopped
- salt and pepper to taste
- 1 tablespoon olive oil
DIRECTIONS
- In a medium pot, saute the onion, carrot, celery, and garlic in olive oil until soft. Add the asparagus, chicken stock, thyme, saffron, salt, pepper, and chicken stock. Bring to a boil, add the Minute Rice, cover, and remove from the flame. Let stand for 5 minutes.
- Season the Halibut with salt, pepper, and thyme. Saute over a medium high flame with olive oil.
- Scoop the rice onto a plate and garnish with the sliced tomatoes. Top with the Halibut and enjoy.

You know I have used Minute Rice for years and I dont think I have ever tried making it into saffron rice. I just hadnt thought of it. This looks good I love halibut fish and love rice so it would be interesting to try.
