Blueberry Cream Cheese Danish

- 2 cups mixed berries (with blueberries or add your own), fresh or frozen
- 1 tbsp chia seeds
- 1 tbsp ground flax seeds
- 1 box of frozen puff pastry sheets
- 1 package of cream cheese
- 1 tablespoon maple sugar
- 1-2 tbsp pure maple syrup for garnish

- Take the frozen pastry sheet out and let it thaw until it is soft enough to work with. This could take anywhere from 20 to 60 minutes, depending on the room temperature.
- Heat the berries in a medium saucepan at medium-low heat until they soften and reduce. Then, remove them from the heat and add flax meal and chia seeds. The longer you let them sit, the more they will soak up the liquid.
- In a separate dish, mix the cream cheese spread or alternative and coarse maple sugar.
- Preheat the oven to 400 degrees and line a large baking tray with parchment paper.
- Unfold the thawed pastry sheets and cut them into equal-sized pieces. If you want the pastries to rise better, lightly cut a smaller square or rectangle about 1/2 inch inside the pastry. Don't cut all the way through.
