Glazed Pumpkin Spice Cookies Recipe

Prep Time 20 minutes | Baking Time 8-11 minutes | Additional Time- 1 hour
Makes 18 jumbo cookies or 36 regular sized cookies

Ingredients

• 1 cup unsalted butter, softened to room temperature
• 1/2 cup vegetable shortening
• 1/2 cup brown sugar, packed
• ½ cup granulated sugar
• 2 large eggs, room temperature
• ¾ cup pumpkin puree
• 2 tsp vanilla extract
• 4 ½ cups all-purpose flour
• 3 tsp baking soda
• 2 tsp ground cinnamon
• 1 tsp ground nutmeg
• ½ tsp ground cloves
• ½ tsp salt
• ½ cup powdered sugar
• ¼ cup maple syrup

Directions

1. Cream the butter, shortening, and brown sugar.
2. Mix in the pumpkin, and then add in the eggs and mix to combine.
3. In a separate bowl, mix the dry ingredients.
4. Add dry ingredients to the wet ingredients and mix until incorporated.
5. Refrigerate cookie dough for an hour.
6. Preheat oven to 375 degrees.
7. Remove from refrigerator and form into 1 ½ inch balls.
8. Place balls of dough on cookie sheets (lined with parchment paper) with 2 inches between each ball.
9. Press the balls down to flatten the cookies to make a 2 ½ inch circles.
10. Bake at 375 degrees for 8-11 minutes.
11. Remove cookies from oven and let cool on wire rack.
12. In a small bowl, mix powdered sugar and maple syrup to form a glaze.
13. Spoon glaze onto cookies and spread with the back of a spoon or knife, or drizzle over the cookies.
