We like to entertain in this house. I love nothing more than having a good dinner and get together with a bunch of friends. My husband and I especially love creating fun, new cocktails for our friends to try out. We created this fun Watermelon Mojito Recipe because we just love watermelon. We get it year round and my husband loves to incorporate watermelon into recipes as much as I love what he creates. We found some really fresh, ripe watermelons that tasted extra sweet. When that is the case, I would strongly suggest that you omit the simple syrup or add it at the end after tasting the drink.

Watermelon Mojito Recipe
Makes 1 drink
Ingredients
- watermelon (seedless, round)
- fresh mint leaves
- Tropicana® Watermelon
- simple syrup
- limes
- rum
- crushed ice
Directions
- Place 4-6 mint leaves in your hands and clap together lightly. This releases the flavor and oils from the mint leaves. Rub the mint leaves along the rim of your glass to flavor your glass. Add the mint leaves to your cocktail shaker glass.
- Along with the mint leaves, 1/2 cup of Tropicana® Watermelon, then muddle 2 watermelon chunks (2 inches by 2 inches) well with the juice of 1/2 lime plus 1 teaspoon of simple syrup.
- Next add 2 ounces white rum and ice. Top with a splash ginger ale.
- Garnish with a couple of mint leaves and a small slice of watermelon.
