Thanksgiving Leftovers Turkey Casserole Recipe

One of my favorite things after every holiday meal has got to be the leftovers. This recipe is something that was shared with my father almost 20 years ago and we have made it numerous times every year without fail. This recipe is something that my family has made for years and in fact, we even make extra food every year so we have a lot of casserole. I cannot remember a year when we have not made Turkey Casserole. We hope that you love our Thanksgiving Leftovers Turkey Casserole Recipe.

Ingredients:

  • Turkey – cut into small, bite-sized pieces
  • Stuffing – cold and cubed
  • Gravy
  • Jar of Gravy – if needed, I like to use a little extra gravy for a creamier recipe
  • butter
  • olive oil
  • cooking spray
  • Egg noodles
  • breadcrumbs (optional)

Directions:

  1. Boil the egg noodles until they are completely done. Use olive oil to make certain that the noodles do not stick together. Drain and line the bottom of your baking dish with the noodles.
  2. Cut up the stuffing into small chunks and add a pat of butter every 3-4 inches to prevent drying out when baking.
  3. Pick the turkey off of the carcass and shred or cut into small, bite-sized pieces. Place stuffing, turkey and gravy over noodles in your baking dish. Top with breadcrumbs, if desired. We don't always use breadcrumbs. I happen to like the original recipe.
  4. Bake casserole for about 45-50 minutes at 350 degrees. Let stand 10-15 before serving. This helps to thicken up the gravy and really makes a hearty meal.
  5. Enjoy! We hope that you loved our Thanksgiving Leftovers Turkey Casserole Recipe.

This is a great idea for holidays and year-round. I know I struggle to find creative ways to make my kids (and husband) eat leftovers!

I shouldn’t be reading recipes at this time of the evening because that looks absolutely delicious and my stomach is starting to growl.
I might toss some sweet peas in there too.
    Great family recipe! Thanks
