Serious Chicken Noodle Soup Recipe

This chicken noodle soup is hearty and filling.

Chicken noodle soup is a favorite among children of all ages, and is perfect for a cold day or when you’re not feeling healthy. This recipe uses egg noodles, but your favorite pasta shape will work just as well. Use homemade chicken stock if possible, otherwise store-bought stock will work fine (as listed in the recipe).
I am a chicken noodle soup snob and this is not your usual chicken noodle soup. The flavor and texture of the egg noodles really change the entire soup. I love good chicken noodle soup. The kind that is hearty and delicious. That is exactly what you will get with this recipe.

SERIOUS CHICKEN NOODLE SOUP

INGREDIENTS

1 tablespoon butter
1 large onion, small dice
2 carrots, small dice
2 stalks of celery, small dice
3 quarts chicken stock
10 ounces egg noodles
3 cups cooked chicken, small dice
salt and pepper as needed
1/4 cup fresh parsley, chopped

METHOD

  1. In a large sauce pot, heat the butter until hot.
  2. Stir in the onions, cooking over medium heat until translucent.
  3. Add in the carrots and celery, cook for an additional two minutes.
  4. Add the chicken stock, bring the liquid to a boil, then reduce to a simmer and add in the egg noodles and chicken.
  5. Simmer until the egg noodles are fully cooked, about seven minutes. Season with salt and pepper as desired, add in the parsley, and serve.

    This is exactly the way I make mine! We have alot of chicken and also turkey soup- it is great when its cold out and reheats so easily. And GranMa was right chicken soup really does help colds!
