We love pumpkin in this house. I love the taste of a freshly baked pumpkin pie topped with lots of whipped cream at Thanksgiving and pretty much any time of the year. However did you know that pumpkin is actually a very versatile superfood that can be used year round? I was recently challenged to use Libby’s Pumpkin to create the perfect spring recipe. We created a Thanksgiving dessert that is so light and delicious that you might just love it as much as we do! Even better that it's one of our recipes with butterscotch pudding. Did you know that Pumpkin is a versatile vegetable in that can be used in a variety of sweet and savory dishes throughout the year? I have never thought about it like that but pumpkin really is something that can be used year round. Pumpkin also works great as an add-in. Stir a couple of tablespoons into a variety of foods for an added boost of fiber, Vitamin A and flavor – oatmeal, smoothies, macaroni and cheese. We have started adding it to our smoothies. Pumpkin makes our smoothies even more creamy and delicious. Keeping pumpkin on hand throughout the year is also a great idea. Leftover pumpkin can be portioned or put into an ice try and stored in the freezer so it ready whenever you want it.
There are some great pumpkin desserts that I absolutely love like weight watchers pumpkin custard, pumpkin mousse cupcakes, sugar free pumpkin dip and even dairy free pumpkin mousse. This recipe took all of that but one step further.
