- Preheat oven to 350 degrees F.
- Cut bread into bite-sized piece squares. I shoot for each square to be 2-3 bites.
- In a bowl, cream together sugar and butter. Add eggs to the bowl and beat. Add crushed pineapple and vanilla. Mix well.
- Evenly spread bread pieces into a greased 9” bundt pan or monkey bread pan. Sprinkle coconut flakes over bread. Pour the contents of the mixing bowl over the bread.
- Bake for 1 hour at 350 degrees. You want the top to be a slightly crispy, toasty golden brown. The inside should be cooked just like French toast.
- Enjoy warm or cold with a dollop of whipped cream.
